Not one, not two, but three of some of Okayama's finest! A tiny tiny brewery run by a small crew of only 3 brewers, these are great sakes to pair with food.
As the apex label of the brewery, the Daiginjo is aromatic & smooth with a new sweetness in the finish, characterised by the unmistakable flavour of Yamada NIshiki rice (polished down to 40%). The Junmai Daiginjo uses Omachi rice polished down to 48% for some great clarity, yet with texture and complexity and a nice sweetness. The Junmai Ginjo has Asahi rice polished down to 55% for a clean clear and bright taste.
Fun fact, the brewery just won it's first National gold medal since World War II!
