Named after a famous water source, the Kokuyō Tokubetsu Junmai is a celebration of the super soft water that's naturally filtered through ancient deposits of obsidian. This water has been a treasured for centuries, its very low mineral content brings out the aromas and flavours of ingredients that it is used with.
However, these very properties make it challenging for brewing sake, requiring a high amount of skill and technology to control the fermentation. The brewery has overcome this challenge and produced this gem of a sake.
A medium-dry, low aroma sake with a light mouth-feel that is full of flavour and puts specially grown Nagano Hitogokoti sake rice on a pedestal. Brilliant when chilled, the brewery also recommends that this sake can be equally enjoyed when gently warmed.
