Designed for the modern Japanese palate, and brewed to be a celebration of Nagano, Takizawa is a beautiful range of sake. It retains the brewery's high aroma style, but with a bolder body and higher acidity.
By creating direct contracts with local rice farmers, the brewery is able to get top-grade Nagano Hitogokoti rice grown to their specifications as a better price. As a result, the farmers make a little more margin, and the brewery is able to put out high quality sake at a great value.
In addition, Takizawa uses a specific water source drawn from an underground mountain stream. This water is naturally filtered through obsidian (Dragon Glass!) which gives it an amazing flavour.
