Instead of simply pursuing higher polishing ratios, the brewery chose to build upon their expertise on working with 35% polish Yamada Nishiki to push the envelope on producing the highest quality Junmai Daiginjo possible.
Made using the luxurious and laborious 'shizuku' hanging drip method, Kikou is superbly elegant with flavours of pineapple and muscat, with a deep flavour and clean aftertaste.
